Turkeys are are classed in the order Galliformes. Many turkeys have been described from fossils. The Meleagrididae are known from the Early Miocene (c. 23 mya) But let`s rather look at the classic Phasianidae. The same one we eat but in more wild lifestyle!

Although the Wild Turkey was well known to American Indians and widely used by them as food, certain tribes considered these birds stupid and cowardly and did not eat them for fear of acquiring these characteristics. By the end of the 19th century, the Wild Turkey had been hunted almost to extinction in much of its original range. Now, with protection, restocking programs, and the return of the mature forests favored by turkeys, this species is making a marked comeback. It is now common in areas where it was totally absent a few decades ago. Turkeys are swift runners and quite wary. They often roost over water because of the added protection that this location offers.  When Europeans first encountered turkeys in the Americas they incorrectly identified the birds as a type of guineafowl (Numida meleagris), also known as a turkey-cock from its importation to Central Europe through Turkey, and the name of that country stuck as the name of the bird. The confusion is also reflected in the scientific name: meleagris is Greek for guinea-fowl.

Turkeys have a distinctive fleshy wattle that hangs from the underside of the beak, and a fleshy protuberance that hangs from the top of its beak called a snood. As with many galliform species, the female (the hen) is smaller than the male (the tom), and much less colorful. A dusky brown, barred with black, with iridescent bronze sheen; head and neck naked, with bluish and reddish wattles; tail fan-shaped, with chestnut, buff, or white tail tips.

The turkeys are by far the largest birds in the open forests, with wingspans of 1.5–1.8 meters. A male go up to 1.2 m and a female up to 91 cm. Their habitat is woodlands and forests. In their Nest, you can find from 8 to 15 buff-colored eggs, spotted with brown, in a shallow depression lined with grass and leaves. While the large domestic turkey is generally unable to fly, the smaller wild turkey can fly to several meters height. This is usually enough to perch in the branches of trees, however, it is an ineffective method of transportation. Turkey poults (chicks) are unable to fly for the first two weeks after they hatch.
The name given to a group of Turkeys is a rafter, although they are sometimes incorrectly referred to as a gobble or flock. Turkey mating season begins in March and April, although "pet" turkey may breed year round. The male turkey will display for the female hen by displaying his tail feathers, dragging his wings, drumming, and his head will turn different colors usually red, blue, white, and sometimes purple. He will also "gobble" to anounce his presence to hens and other males. The female turkey will "yelp" or "cutt" to let the male know her location
